30-Minute Stuffed Bell Peppers

So many people overcomplicate dinner - this recipe takes 30 minutes and makes it easy on you!

Ingredients:

  • 3-4 bell peppers, halved lengthwise and seeds/membrane removed

  • 2 T EVOO

  • 1/2 large red onion, diced

  • 1 lb lean ground beef

  • 1 1/2 -2 T taco seasoning

  • 1 c black beans, drained

  • 1 Roma tomato, diced

  • 1/2 c cilantro, chopped

  • Mexican cheese to taste

  • Salsa to serve

Directions:

  1. Preheat oven to 450°F and line a rimmed baking sheet with parchment paper or foil.

  2. Heat EVOO in a medium saucepan over medium-high heat. Once warm, add the onion and sauté until softened, 4-5 minutes.

  3. Add the ground beef and cook until browned, stirring occasionally to break it up.

  4. Drain excess grease and turn the heat to low. Sprinkle in taco seasoning and mix to combine.

  5. Add black beans and cook for 1-2 minutes, until cooked through. Add the diced tomato and toss to combine.

  6. Using a large spoon, scoop the beef mixture into each half of the bell peppers. Place on the prepared baking sheet, sprinkle with cheese, and bake for 10-12 minutes or until the cheese has slightly browned.

  7. Top with cilantro and serve with salsa!
