BBQ Chicken Bacon Flatbread Pizza
My favorite super bowl snack!

Ingredients:
1 flatbread crust (I bought a pack of two at my local grocery store)
1/4 c bacon, diced
5 oz chicken breast
2 T + 1/4 c BBQ sauce
1/2 c red onion, thinly sliced
2 oz mozzarella, shredded
2 oz gouda, shredded
2 T fresh parsley, chopped
Directions:
Preheat oven to 400F and line a baking sheet with parchment paper.
Place chicken breast in a stockpot and cover with water (about 1 1/2 inches of water above the chicken) and bring the water to a boil. Boil for 7-10 minutes or until the internal temperature reaches 165F. Remove the chicken breast from the water and set aside to cool. Once cool, shred it using two forks or an electric mixer. Add 2 T of bbq sauce to the shredded chicken and toss to coat.
Lay the flatbread on the prepared baking sheet and spread the remaining 1/4 c of bbq sauce on top in an even layer. Top with mozzarella, gouda, bacon, chicken, and red onion. Bake for 8-12 minutes, until the cheese is slightly browned and the sauce bubbles.
Remove from the oven and garnish with parsley, then slice and serve!
