Blackened Fish Tacos with Cilantro Lime Sauce

Basically summer in a taco.

For Cilantro Lime Sauce:

  • 1 c cilantro

  • 1/2 c Greek yogurt

  • 4 T lime juice

  • 1/2 t cumin

  • 1 clove garlic

  • 1/2 large avocado

For Blackened Seasoning:

  • 2 t chili powder

  • 2 t garlic powder

  • 2 t onion powder

  • 2 t paprika

  • 2 t cumin

  • 1/2 t salt

  • 1/8-1/4 t cayenne

  • 1/4 t pepper

For the Tacos:

  • 1 lb cod, cut into 2" strips

  • 2 T avocado oil

  • 1 c shredded carrots (matchsticks)

  • 1 c shredded purple cabbage

  • 1 jalapeno, sliced

  • 1/2 avocado, thinly sliced

  • taco tortillas

  • cilantro to garnish

  1. Whisk all ingredients for the blackened seasoning together in a small bowl. Pat cod dry then toss in seasoning and set aside.

  2. Make the cilantro lime sauce. Put all ingredients in a food processor and pulse until smooth and creamy. Set aside.

  3. Heat avocado oil in a medium skillet over medium heat. Once warm, add the seasoned cod and cook for 2-3 minutes on each side, until the internal temperature reaches 145F.

  4. Assemble! Layer the cod, carrots, cabbage, avocado, and jalapenos in a tortilla. Top with cilantro lime sauce and cilantro, then serve immediately.
