Blackened Fish Tacos with Cilantro Lime Sauce
Basically summer in a taco.

For Cilantro Lime Sauce:
1 c cilantro
1/2 c Greek yogurt
4 T lime juice
1/2 t cumin
1 clove garlic
1/2 large avocado
For Blackened Seasoning:
2 t chili powder
2 t garlic powder
2 t onion powder
2 t paprika
2 t cumin
1/2 t salt
1/8-1/4 t cayenne
1/4 t pepper
For the Tacos:
1 lb cod, cut into 2" strips
2 T avocado oil
1 c shredded carrots (matchsticks)
1 c shredded purple cabbage
1 jalapeno, sliced
1/2 avocado, thinly sliced
taco tortillas
cilantro to garnish
Whisk all ingredients for the blackened seasoning together in a small bowl. Pat cod dry then toss in seasoning and set aside.
Make the cilantro lime sauce. Put all ingredients in a food processor and pulse until smooth and creamy. Set aside.
Heat avocado oil in a medium skillet over medium heat. Once warm, add the seasoned cod and cook for 2-3 minutes on each side, until the internal temperature reaches 145F.
Assemble! Layer the cod, carrots, cabbage, avocado, and jalapenos in a tortilla. Top with cilantro lime sauce and cilantro, then serve immediately.
