Buffalo Chicken Flatbread Pizza

Honestly just really good.

Ingredients:

  • 1 flatbread crust (I bought a pack of two at my local grocery store)

  • 5 oz chicken breast

  • 2 T + 1 /4 c buffalo sauce

  • 1/4 c ranch

  • 3 oz shredded mozzarella

  • 1 green onion, sliced

  • Red pepper flakes to taste

Directions:

  1. Preheat oven to 400F and line a baking sheet with parchment paper.

  2. Place chicken breast in a stockpot and cover with water (about 1 1/2 inches of water above the chicken) and bring the water to a boil. Boil for 7-10 minutes or until the internal temperature reaches 165F. Remove the chicken breast from the water and set aside to cool. Once cool, shred it using two forks or an electric mixer. Add 2 T of buffalo sauce to the shredded chicken and toss to coat.

  3. Lay the flatbread on the prepared baking sheet. In a small bowl, whisk together the remaining 1/4 c of buffalo sauce and the ranch. Spread in an even layer over the flatbread, then top with chicken and mozzarella. Bake for 8-12 minutes, until the cheese is slightly browned and the sauce is bubbling.

  4. Remove from the oven and garnish with green onion and red pepper flakes, then serve with ranch.
