Chocolate Peppermint Crinkle Cookies
Santa's favorite cookie...shh don't tell anyone I told you!

Ingredients:
2 c flour
2 t baking powder
1/2 c cocoa powder
1/2 t salt
1/2 c unsalted butter, softened
1 c sugar
2 eggs
1 t vanilla
5 candy canes, smashed very small
3/4 c powdered sugar
Directions:
In a medium mixing bowl, whisk together flour, baking powder, cocoa powder, and salt. Set aside.
Using an electric mixer, whisk together butter and sugar until creamy, 1-2 minutes. Add eggs & vanilla and whisk until well-combined, 2-3 minutes.
Slowly add dry ingredients into the butter/sugar mixture, working in batches. Mix until fully combined.
Add the crushed candy canes, reserving about 1/4 c to sprinkle on top, and fold in until evenly distributed.
Cover and refrigerate the dough for 30 min.
Preheat oven to 350°F and line a large baking sheet with parchment paper. Add the powdered sugar to a small bowl.
Scoop the dough into rounded tablespoons and roll it into balls with your hands. Roll each ball in the powdered sugar until fully coated, then place on the prepared baking sheet about 1 1/2" from one another.
Bake for 10-12 minutes, then sprinkle with extra crushed candy canes. Allow the cookies to cool on the baking sheet for a couple of minutes before transferring to a cooling rack.
