Cranberry and Brie Crostini with Fresh Thyme

So good I ate five but don't tell (;

For the Cranberry Sauce:

  • 1 c fresh cranberries

  • 1/4 c orange juice (from about 1 orange)

  • 2 t orange zest

  • 1/3 c dark brown sugar

  • 1/2 t pure vanilla extract

  • 1 cinnamon stick

  • 1 star anise pod

For the Crostini:

  • 1 baguette

  • EVOO

  • 8 oz brie cheese, thinly sliced

  • 3 t fresh thyme leaves

  • Honey to taste

Directions:

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.

  2. Slice the baguette diagonally into 1/2" pieces and arrange in a single layer on the prepared baking sheet. Drizzle with EVOO and bake for 5-8 minutes, or until toasted.

  3. Meanwhile, make the cranberry sauce. Add all ingredients into a saucepan and bring to a boil over medium-high heat. Stir consistently to avoid burning. Once boiling, you'll notice the cranberries will begin to pop. Continue boiling for a few minutes until they have all popped. Reduce heat to low and simmer for 5 minutes until thickened. Set aside.

  4. Time to assemble! Lay one slice of brie on each slice of the baguette, then top with a teaspoon of cranberry sauce and a drizzle of honey. Sprinkle the thyme on top and serve!
