Creamy Queso with a Kick

Better than Tostitos I promise!

Ingredients:

  • 1 T EVOO or avocado oil

  • 1/2 yellow onion, diced

  • 1 (4 oz) can green chili

  • 1 t garlic powder

  • 1 cumin

  • 1 t chili powder

  • 1/4-3/4 t cayenne (depending on heat tolerance)

  • 1/4 t salt

  • 1/4 t pepper

  • 4 oz cream cheese

  • 1/4-3/4 c milk

  • 4 oz monterrey jack cheese, shredded

  • 4 oz pepper jack cheese, shredded

  • 4 oz mild cheddar, shredded

To Garnish:

  • 1 roma tomato, diced

  • 4 T cilantro leaves

  • 1 jalapeño, sliced

  • 1 green onion, sliced

Directions:

  • Heat oil in a large cast iron skillet over medium-high heat. Once warm, add the onion and green chili and sauté until softened, 4-5 minutes. Add the spices and stir to combine. Reduce heat to medium-low.

  • Add the cream cheese and milk and whisk until smooth. Start with 1/4 c of milk and save the rest for later. Whisk in the remaining three kinds of cheese and stir until smooth. Add more milk if the mixture is too thick and continue stirring until the queso is heated through.

  • Top with garnishes and serve over nachos or with tortilla chips.

Note:  I like to serve mine on the stove over low heat so it stays warm!
