Easy Chocolate Covered Strawberries

Everyone's favorite Valentine's Day treat!

Ingredients:

  • 12 strawberries, washed and fully dry

  • 1 c dark chocolate chips

  • 1/4 c white chocolate chips

  • 1 1/4 t coconut oil, divided

Directions:

  • Line a baking sheet with parchment paper and place a cooling rack on top.

  • Heat dark chocolate and 1 t coconut oil in a small skillet over low heat until melted. Stir frequently to avoid burning. Remove from heat and transfer to a narrow, deep dish.

  • Meanwhile, while the chocolate is melting, poke two toothpicks through the top of each strawberry. Make sure the toothpicks don't go all the way through but about halfway through each strawberry.

  • Hold the toothpicks, then dip each strawberry into the chocolate and place it on the prepared cooling rack. Once all the strawberries have been dipped, place them in the fridge until hardened, about 10-15 minutes.

  • While the chocolate hardens, repeat the melting process with the white chocolate and the remaining 1/4 t coconut oil. Once the chocolate covered strawberries have hardened remove them from the fridge and drizzle the white chocolate on top using a spoon. Let harden in the fridge, then serve immediately or keep in the fridge until you're ready to serve.
