Fluffy Molasses Cookies
A Christmas miracle of a cookie!

For the Cookies:
2 1/4 c unbleached all-purpose flour
2 t baking soda
2 t ground ginger
1 t cinnamon
1/2 t cloves
1/2 t nutmeg
1/4 t salt
3/4 c unsalted butter, softened
1/2 c dark brown sugar
1/4 c granulated sugar
1/3 c unsulphured molasses
1 egg, room temperature
2 t vanilla bean paste
To Roll:
1/2 c granulated sugar
Directions:
In a large mixing bowl, whisk together dry ingredients, then set aside.
In the bowl of an electric mixer, cream together butter and sugars until fluffy and creamy. Add molasses, egg, and vanilla bean paste and mix until creamy, 2-3 minutes.
Slowly add dry ingredients to the wet ingredients and mix until fully combined.
Cover and refrigerate for two hours.
Preheat oven to 350°F and line a baking sheet with parchment paper.
Scoop the dough into rounded tablespoons and roll it into balls. Coat each ball in the granulated sugar and place 2” apart on the prepared baking sheet.
Bake for 8 to 12 minutes, until slightly golden. Remove and let cool on the baking sheet for a couple of minutes before transferring to a cooling rack.
