Honey Goat Cheese Pear Galette with Cinnamon and Fresh Thyme

Ingredients:

  • 2 sheets puff pastry, thawed

  • 6 oz goat cheese

  • 2 1/2 t honey

  • 2 Bosc pears, cores removed and thinly sliced

  • 1/4 c brown sugar

  • 6-8 sprigs fresh thyme

  • 1 egg

  • 1 t heavy cream (milk will work as well)

  • 2 T turbinado sugar*

  • Cinnamon to taste

Directions:

  1. Preheat oven to 400 F and line a baking sheet with parchment paper.

  2. In a small mixing bowl, mix together goat cheese and honey using a large fork. Mix until fully combined and smooth, 3-4 minutes.

  3. Place one of the sheets of puff pastry on the prepared baking sheet. Using a rolling pin, gently roll out the pastry until it’s about 1/4” thick. Then, using a fork, poke a few holes throughout the pastry. Repeat for the other sheet.

  4. Using a spatula, gently spread the 1/2 of the honey goat cheese on the center of each pastry, leaving about 1 1/2 “ along the edge.

  5. Arrange sliced pears however you’d like, in a circle or square, on each pastry.

  6. Sprinkle brown sugar and thyme on top, then fold the edges of the pastry over the pears, overlapping itself to create a good seal.

  7. In a small bowl, whisk together the egg and heavy cream. Using a pastry brush, brush the edges of the pastry with the egg mixture. Sprinkle turbinado sugar on top and bake for 12-15 minutes, until edges are slightly golden brown and crispy.

  8. Sprinkle cinnamon on top and serve immediately! You can also serve with vanilla ice cream on top, or just by itself.
