Loaded Baked Nachos

A favorite late night snack and super bowl fan favorite!

Ingredients:

  • 1-2 (11 oz) bags of tortilla chips

  • 1 lb ground beef

  • 2-3 T taco seasoning

  • 8 oz Mexican cheese blend

  • 1 (15 oz) can black beans, drained

  • 4 green onions, sliced

  • 2 roma tomatoes, diced

  • 3/4 c Mateo's salsa

  • 1/3 c red onion, sliced

  • 1 jalapeño, sliced

To Garnish:

  • Sour Cream

  • Guacamole

Directions:

  1. Preheat oven to 425F.

  2. Heat oil in a cast iron pan over medium heat. Add the ground beef and cook until browned. Stir in taco seasoning and set aside.

  3. Layer half of the tortilla chips on a large baking sheet, then sprinkle half of the cheese, ground beef, black beans, green onions, tomatoes, and salsa on top. Layer the remaining half of tortilla chips on top and the remaining half of the cheese, ground beef, black beans, green onions, tomatoes, and salsa on top.

  4. Bake for 10 minutes, then remove from the oven and sprinkle red onion and jalapeño on top. Serve with guacamole and sour cream.
