Oven-Baked Garlic Parmesan Fries

Eating these with every dinner from here on out!!

Ingredients:

  • 5 russet potatoes, cut lengthwise into thin strips

  • 1 T avocado oil

  • 1 1/2 t garlic powder

  • 1/2 t salt

  • 3/4 c freshly grated parmesan

  • 1/3 c parsley

Directions:

  1. Cover cut potatoes in water in a large bowl and let soak for 30 minutes. Drain, then thoroughly dry with a towel.

  2. Preheat oven to 425F and line a large baking sheet with parchment paper.

  3. In the same bowl as before, toss the fries with avocado oil, garlic powder, and salt. Arrange in a single layer on the prepared baking sheet and roast for 20 minutes. Flip, then roast another 15-20 minutes. (You can also turn the broiler on for 2-3 minutes at the very end if you want them extra crispy!). Let the fries cool for 5 minutes.

  4. In a large bowl, toss the fries with the parmesan and parsley, then serve immediately.
