Persimmon Pomegranate Pecan Winter Salad
A medley of seasonal winter flavors to spice up your December dinners.

Ingredients:
5 oz arugula
1/2 c fresh parsley, chopped
1 shallot, minced
2 persimmons; peeled, sliced and halved (or quartered for smaller bites)
1/3 c pomegranate arils (seeds)
1/3 c pecan pieces
1/2 c goat cheese
2 T EVOO
3 T balsamic reduction or balsamic glaze
Directions:
Add arugula, parsley, shallot, persimmon, pomegranate arils, pecan pieces, and goat cheese to a large serving bowl and gently toss to combine with salad forks.
Drizzle with EVOO and balsamic glaze and serve!
