Persimmon Pomegranate Pecan Winter Salad

A medley of seasonal winter flavors to spice up your December dinners.

Ingredients:

  • 5 oz arugula

  • 1/2 c fresh parsley, chopped

  • 1 shallot, minced

  • 2 persimmons; peeled, sliced and halved (or quartered for smaller bites)

  • 1/3 c pomegranate arils (seeds)

  • 1/3 c pecan pieces

  • 1/2 c goat cheese

  • 2 T EVOO

  • 3 T balsamic reduction or balsamic glaze

Directions:

  1. Add arugula, parsley, shallot, persimmon, pomegranate arils, pecan pieces, and goat cheese to a large serving bowl and gently toss to combine with salad forks.

  2. Drizzle with EVOO and balsamic glaze and serve!
