Quick and Easy Taco Salad

A simple, yummy, comfort food meal.

Ingredients:

  • 1 lb ground beef

  • 2-3 T taco seasoning

  • 1 small head iceberg lettuce, shredded

  • 1 c cherry tomatoes, halved

  • 1 red onion, sliced

  • 1/3 c Mexican cheese blend

  • 3 T cilantro leaves

  • Salsa to taste

  • Sour Cream to taste

  • Tortilla chips

  • 1 lime, cut into wedges

Directions:

  1. Cook the ground beef. Heat a cast iron pan over medium heat. Add the ground beef and cook until browned, typically 8-10 minutes. Mix in the taco seasoning and set aside.

  2. Assemble the salad. Layer the lettuce, ground beef, and tortilla chips on the bottom of each bowl. Top with tomatoes, red onion, cheese, cilantro, sour cream, and salsa. Squeeze a lime wedge over the top and serve.
