Roasted Ranch Fingerling Potatoes

Who doesn't love ranch & potatoes??

For the Ranch Seasoning:

  • 1 T dried dill

  • 2 t garlic powder

  • 2 t onion powder

  • 2 dried parsley

  • 1/2 t salt

  • 1 t pepper

For the Potatoes:

  • 1 lb fingerling potatoes, halved lengthwise

  • 1 T EVOO

  • 1 1/2 - 2 T ranch seasoning

Directions:

  1. Preheat oven to 400F and line a baking sheet with parchment paper.

  2. Whisk together ranch seasoning ingredients and set aside.

  3. In a medium mixing bowl, add the fingerling potatoes and EVOO. Mix together until fully coated. Add the ranch seasoning and mix again until fully combined.

  4. Arrange in a single layer, cut-side down, on the prepared baking sheet and roast for 35-40 minutes or until browned and crispy.
