Spicy Pasta Alla Vodka

Ingredients:
16 oz rigatoni or short pasta
2 T EVOO
2 medium shallots, minced
4 garlic cloves, minced
2 t oregano, dried
1 t red pepper flakes
1 t salt
1/4 t pepper
6 oz tomato paste
3/4-1 c heavy cream
6 T vodka
3/4 c pasta water
1/2 c freshly shaved parmesan
Directions:
Cook pasta according to package instructions. Make sure you reserve the pasta water once it's finished cooking.
Heat EVOO in a large saucepan over medium-high heat. Once warm add the shallots and saute until softened, 3-5 minutes. Add garlic, spices, salt & pepper and saute another 1-2 minutes, until fragrant.
Reduce heat to medium-low, add tomato paste and whisk until smooth. Add heavy cream, vodka, and cook until thickened, 4-5 minutes.
Once the pasta has almost finished cooking, add the 3/4 c pasta water and the parmesan to the sauce. Whisk until smooth, about 3-5 minutes.
Add the pasta directly into the sauce and toss to coat. Top with more freshly shaved parmesan and red pepper flakes.
