Spicy Pasta Alla Vodka

Ingredients:

  • 16 oz rigatoni or short pasta

  • 2 T EVOO

  • 2 medium shallots, minced

  • 4 garlic cloves, minced

  • 2 t oregano, dried

  • 1 t red pepper flakes

  • 1 t salt

  • 1/4 t pepper

  • 6 oz tomato paste

  • 3/4-1 c heavy cream

  • 6 T vodka

  • 3/4 c pasta water

  • 1/2 c freshly shaved parmesan

Directions:

  1. Cook pasta according to package instructions. Make sure you reserve the pasta water once it's finished cooking.

  2. Heat EVOO in a large saucepan over medium-high heat. Once warm add the shallots and saute until softened, 3-5 minutes. Add garlic, spices, salt & pepper and saute another 1-2 minutes, until fragrant.

  3. Reduce heat to medium-low, add tomato paste and whisk until smooth. Add heavy cream, vodka, and cook until thickened, 4-5 minutes.

  4. Once the pasta has almost finished cooking, add the 3/4 c pasta water and the parmesan to the sauce. Whisk until smooth, about 3-5 minutes.

  5. Add the pasta directly into the sauce and toss to coat. Top with more freshly shaved parmesan and red pepper flakes.
