Spicy Thai Steak Bite Bowl

Inspired by a meal I had in my husband's hometown and I must say, it is absolutely delicious!

For the Steak:

  • 1 T EVOO or avocado oil

  • 1 lb lean top sirloin steak, cut into 1" cubes

  • 1 T Maldon Sea Salt Flakes

  • 2 t pepper

  • 1 1/2 t garlic powder

For the Bowl:

  • 1 c cooked brown rice

  • 1/2 large avocado, thinly sliced

  • 1 large carrot, peeled into ribbons

  • 2 c arugula

  • 1/4 c coconut peanut sauce (or any Thai peanut sauce)

  • 1/2 - 1 t chili crisp, to taste

  • cilantro to garnish

Directions:

  1. In a medium mixing bowl, season steak with salt, pepper, and garlic powder and gently rub into the steak.

  2. Heat oil in a cast iron pan over medium heat. Once warm, add the steak cubes and sear on each side for 3-5 minutes or until cooked to the desired temperature (a medium steak is 140F). Remove from heat and set aside.

  3. Assemble the bowls! Lay a bed of brown rice, add the steak, then top with avocado, carrot, and arugula. Drizzle the peanut sauce on top and dollop the chili crunch. Top with fresh cilantro leaves and serve immediately!
