Sweet Potato Breakfast Hash

Better than your favorite brunch spot.

Ingredients:

  • 2 t avocado oil

  • 1/2 c diced sweet potatoes

  • pinch of salt

  • pinch of pepper

  • 1 1/2 T shallot, minced

  • 2 links Bilinski's cooked breakfast sausage, halved and sliced

  • 2 eggs

  • 1/3 c arugula

  • 5-7 cherry tomatoes, havled

  • 1/2 small avocado, sliced

  • red pepper flakes to taste

  • 3 chives, chopped (optional)

Directions:

  1. Heat avocado oil in a medium saucepan over medium heat. Once warm, add the sweet potatoes and season with salt and pepper. Cook for 8-10 minutes with the lid on, stirring frequently to keep the sweet potatoes from burning.

  2. Add the minced shallot and sauté for 2-3 minutes, until fragrant. Add the sausage and cook until heated through, another 2-3 minutes.

  3. Move the mixture to the side of the pan and crack the eggs into the open half. Season with salt and pepper and cook for about 2 minutes, until over easy. Remove the pan from heat.

  4. Layer the sweet potato mixture on the bottom of a plate, then top it with the eggs, arugula, tomatoes, and avocado. Sprinkle red pepper flakes and chives on top and serve.
