Sweet Potato Breakfast Hash
Better than your favorite brunch spot.

Ingredients:
2 t avocado oil
1/2 c diced sweet potatoes
pinch of salt
pinch of pepper
1 1/2 T shallot, minced
2 links Bilinski's cooked breakfast sausage, halved and sliced
2 eggs
1/3 c arugula
5-7 cherry tomatoes, havled
1/2 small avocado, sliced
red pepper flakes to taste
3 chives, chopped (optional)
Directions:
Heat avocado oil in a medium saucepan over medium heat. Once warm, add the sweet potatoes and season with salt and pepper. Cook for 8-10 minutes with the lid on, stirring frequently to keep the sweet potatoes from burning.
Add the minced shallot and sauté for 2-3 minutes, until fragrant. Add the sausage and cook until heated through, another 2-3 minutes.
Move the mixture to the side of the pan and crack the eggs into the open half. Season with salt and pepper and cook for about 2 minutes, until over easy. Remove the pan from heat.
Layer the sweet potato mixture on the bottom of a plate, then top it with the eggs, arugula, tomatoes, and avocado. Sprinkle red pepper flakes and chives on top and serve.
